Elinor’s Coleslaw Recipe
1/2 head cabbage, green
1 bunch onions, green
1 ea sweet pepper, diced
1 cup carrots, shredded
1 cup radish, red
1 cup celery, diced diced
1 ea apple diced
1⁄3 cup raisin
Dressing
1⁄3 cup sweet relish
3 TBS olive oil
1 teaspoon ac vinegar
2 TBS mustard
3/4 cup Veganaise
Salt and pepper to taste
Directions
Grate cabbage, carrot and daikon radish. Chop the green and white parts of the onions. Chop celery and apple into 1/4 inch pieces. Cut top off red pepper, slice in half, devein and remove seeds, chop into 1/4 inch pieces. Combine chopped fruits and vegetables, add raisins.
Combine all spices, salt and pepper with relish, olive oil, mustard and Vegenaise in a jar and mix together, thoroughly. Add half of the dressing to combined vegetables and taste....continue to mix to taste until satisfied with flavour.
