This isn’t my recipe - I just located it in the YouTube description box and copied and pasted it. Ingredients: 1 lbs whole wheat fusilli or penne, cooked and cooled 1 cup green bell pepper, chopped 1 cup cherry tomatoes, quartered 1 cup cucumbers, diced 1 red onion, diced 1 cup olives, diced ¾ cup vegan feta, crumbled 1½ cup fresh basil and parsley, chopped 1 ½ cups chickpeas, drained and rinsed FOR THE VINAIGRETTE: ⅓ cup red wine vinegar 1 lemon, juice ½ tsp dried oregano ½ tsp sea salt 1 tsp nutritional yeast 2 tbsp dijon mustard ½ tsp black pepper, freshly cracked if possible ⅓ cup extra virgin olive oil Equipment: Pasta pot Large bowl Instructions: Combine the dressing ingredients in a jar and shake or whisk until a dressing is formed. Add all ingredients to a bowl and toss. Enjoy immediately, or store in the fridge for up to 4 days.

I love pasta salad, I also add olives, artichokes and sun dried tomatoes to mine. The longer it sits the better it tastes. 😋

Y’all im not the type to enjoy such salads with many weird ingredients so if i as a kinda pickey eater enjoyed it then you hopefully will, i added many changes like: I didn’t have basil abd parsley, i used watercress and anfjekasj (idk what its called) I didn’t add chickpeas and i used black olives I neither had vegan feta nor normal feta, i used a cheese that i thought it tasted similar I didn’t add wine vinegar i added balsamic vinegar

I make a similar salad but also add some marinated artichokes to it. When I want to change it up, instead of pasta I add quinoa or bulgar wheat. I love making it with orzo pasta or the mini bow tie pasta usually used for soups, so all the ingredients are similar in size. And sometimes I swap out the chick peas for green or black lentils. Sometimes adding different fresh herbs to it as well. Parsley works great as do mint, oregano, or thyme or a mixture of herbs. I love fresh basil in there too but I use that fresh on the day otherwise it goes a bit slimy and black. But like you, I am also obsessed with this salad, there is so many flavours and textures (not to mention all the seasonal changes one can make) that it is nearly impossible to get bored. My only problem is that I enjoy it so much it is difficult not to make my portion sizes too big lol. I saw someone recently using a green goddess dressing too (vegan obviously), which I am looking forward to trying in my next pasta salad. But this salad as you have done it is just a perfect flavour combo. Thank you for sharing! 💚🏴

Not vegan, but I do this one very often. Fusilli are the best pasta shape for this! This recipe is a bomb. I also add tuna, quinoa, cherry tomatoes, pickel veggies...you name it. Perfect for Summer
I'm no vegan. In fact, I'm very carnivorous, but I made this salad two times this week. Sooooo good.
